Fruit fool is a classic English dessert, and probably one of the easiest to make. This recipe has a twist – we are replacing whipped cream seen in the traditional recipes with low fat yogurt making it not just tasty and refreshing, but healthy as well. This four ingredient dessert is a real treat for this mango season!

Mango and Passion Fruit Fool
Servings: 4 portion
Ingredients
- 3 Mangoes (Ripe)
- 3 Passion Fruit
- 1 cup Yogurt (non fat)
- 1/2 Lime
Instructions
- Peel the mangoes. Puree two of them in a blender. Cut the passion fruits and scoop out the juice and seeds into a glass.
- Mix 2/3 of the passion fruit juice with the mango puree. Squeeze the lime juice and mix well.
- Take 4 glasses, add a scoop of yogurt as the base. Top up this layer with the fruit puree. Add another layer of yogurt and top up with the remaining mango puree. Cover and chill the glasses for 1 hr. Top with the diced mangoes and drizzle the remaining passion fruit before serving.
- Tip - Use ripe, sweet mangoes for best results. If the mangoes are not sweet enough, fold some honey into the yogurt before adding the layers.
