Instructions
  1. De-vein the prawns and peel the shells off (only from the body). Keep the heads on.
  2. Prawn heads will add more flavour to your dish. If you don't like getting your hands messy while eating, get rid of the heads as well.
  3. Get the garlic, chilies and parsley ready. Chop the garlic and keep it aside. Crush the chilies to flakes. Parsley should be finely chopped for garnishing.
  4. In a thick-bottomed pan, melt butter and add 2 tablespoons of Olive oil.
  5. Once the oil is hot, fry the garlic and chili flakes. Wait for the garlic to turn golden brown, add the prawns and stir well. Sprinkle with salt. The butter will have a decent amount of salt. Consider that before adding more salt.
  6. Fry the prawns for less than 3 min on each side. Take the fried prawns and place them in a bowl.
  7. For the dressing, in another small bowl, add the chopped parsley leaves, and 1 tablespoon Olive oil. Empty the left over mixture from the pan after frying the prawns into this bowl. Mix well, and drizzle this mixture on top of the fried prawns. Serve fresh and hot. Eat with some bread to soak up the amazing sauce.
